Cabernet Sauvignon: A relative newcomer in the wine world

Surprisingly enough Cabernet Sauvignon is not one of the oldest wine grape varieties in the world. The oldest recorded reference to Cabernet Sauvignon comes from the 18th Century and Chateau Mouton. Baron de Brane ripped up the white varieties and planted a red variety called Vidure. Vidure comes from the French words Vigne Dure or hardy vine in reference to the tough nature of Cabernet Sauvignon. The name’s still used today in some parts of the Bordeaux.

Among the best red wines produced in California is Cabernet Sauvignon. It is the most dependable candidate for aging, more
often improving into a truly great wine than any other single varietal

At its best, Cabernet produces wines of great intensity and depth of flavor. Its classic flavors are currant, plum, black cherry and spice.
It can also be marked by herb, olive, mint, tobacco, cedar and anise, and ripe, jammy notes. Cabernets start out dark purple-ruby in color, with firm acidity, a full body, great intensity, concentrated flavors and firm tannins.

Our 1999 Cabernet Sauvignon Napa Valley is big and full, intensely colored with a good nose. Heslip Family Cabernet may be best described as "not a wimpy Cab", is sturdy enough to cellar but soft enough to drink now.
